Professor Keith Belk is a Professor and Holder of the Ken & Myra Monfort Endowed Chair in Meat Science in the Center for Meat Safety and Quality (CMSQ) at Colorado State University. Belk also serves as Director of CMSQ and as an adjunct professor in the Colorado School of Public Health.
As a senior scientific advisor at EpiX Analytics, Keith focuses on improving food safety and animal health through fundamental and applied research, developing new technologies, and policy support and scientific advocacy.
Keith’s research focuses on meat quality and safety, live animal development, international marketing of red meats, and quality management systems. Dr. Belk has won several awards over the course of his career, including the North American Meat Association’s Harry L. Rudnick Educator’s Award and the American Meat Science Association’s Signal Service Award, both in 2013.
Dr. Belk is also affiliated with several professional organizations, including the American Society of Animal Science, the Western Stock Show Association, and the Institute of Food Technologists. He serves as an academic advisor to the North American Meat Institute’s Protein PACT and to JBS Global, and on the Board of Directors for the International Stockmen’s Educational Foundation.
